EXTRUDED PASTA

COOKING
- Bring plenty of salted water to a heavy rolling boil. Pasta needs room to cook - you need enough water for the pasta to swim freely in.
- Freshly extruded pasta needs far less cooking time than dried pasta that you buy from the supermarket. Check your pasta for firmness after 1-2 minutes.
- Toss through your warmed sauce and serve.
STORAGE
- Extruded pasta stores well for up to 3 days in the fridge.
- Store pasta in an airtight container, with a dry paper towel on the bottom and also on the top.

FILLED PASTAS
(RAVIOLI, TORTELLINI)
COOKING
- Bring plenty of salted water to a heavy rolling boil. Pasta needs room to cook - you need enough water for the pasta to swim freely in.
- Because filled pasta has double layers where there are joins, and a filling that needs heating, they require a little more cooking time. Cook for 2-3 mins, checking the thickest part of the pasta for doneness.
- Filled pasta will also float to the surface when they are nearing doneness.
- Toss through your warmed sauce and serve.
STORING
- Filled pastas need to be eaten the same day as purchase. If left overnight, the filling may soften the pasta too much and become gluey.
- Store pasta in the fridge in an airtight container, with a dry paper towel on the bottom and also on the top.
- Filled pastas freeze very well. Freeze in an airtight container, with a dry paper towel on the bottom and also on the top.
- Do not defrost before cooking - cook from frozen. The cooking time will be longer, 3-5mins depending on the size.
